3 years!

Today
is my 3 year anniversary...
it marks the day I ended one journey..
to start a new one.
It had been wonderful... we were truley made for
each other.

A healthy day

Breakfast
Dannon light & fit strawberry yogurt, 1/4 C unsweetened apple sauce, decaf black tea
Lunch
Subway veggie delight salad, fresh cut apples
Dinner
Turkey & veggie meatloaf, low cal garlic bread, broccoli, green beans
Topped off with a two mile walk on the trail with my love!

Turkey & Veggie Meatloaf

Turkey & Veggie Meatloaf
1 lb. of ground turkey
1 egg
1/4C seasoned breadcrumbs
1/2C crushed ritz crackers
1/2 C shredded or chopped carrots
1/4 C chopped onions
1/4 C diced tomatoes
1/4 C 2% milk
1/4 C shredded american cheese part skim
1/2 C chopped red/yellow peppers
Combine all ingredients and cook @ 350 for 60 minutes. 10 minutes before it's done remove and cover the top with 1/4 C ketchup mixed with 3 Tbsp. light brown sugar and return to the oven

workin out and diet changes.

today I was able to run 3 miles on the treadmill, of course at a very slow pace (12 min/mile) but I still did it. If I try to run fast my bladder cannot handle it, so slow and steady it is! I also have been doing lots of arm work with weights. Todays weight set looked like this:
Seated curls 4 sets of 25 reps on each arm
Seated overhead extensions both arms at once 4 sets of 25 reps
Standing behind head raises both arms at once using 1 weight 2 sets of 30 reps.

I have also been thinking more and more about our diet, and have wanted to change things a bit. I want to stay away from most all refined sugar foods, processed foods, and processed dairy. We don't really eat that much of those things anyway so it shouldn't be to hard. I want to get our diet consisting of mostly clean, live foods.. like veggies espcially greens, fruit, nuts, beans, and meats but no pork, mostly chicken, turkey, chevon(goat), and very lean beef.

I will post as many of the recipes that I use as I can. If you have any good ones to share with me I would love them.

What I will be cutting out is alot of carbs, dairy, and unhealthy cuts of meat. Thats not to say taht I will not cook any bread or pasta but it will be limited and include lots of veggies.

Dinner!!!!!!!!!!!

Kraft-Bruchetta Stuffed Chicken
What You Need!
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1/4 cup chopped fresh basil
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
8 small boneless skinless chicken breast halves (2 lb.)
1/3 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing
Make It!
HEAT oven to 350ºF.
MIX tomatoes, 1/2 cup cheese and basil in medium bowl. Add stuffing mix; stir just until moistened.
PLACE 2 chicken breasts in freezer-weight resealable plastic bag; pound to 1/4-inch thickness. Remove from bag; place, top-sides down, on cutting board. Repeat. Spread chicken with stuffing mixture; roll up. Place, seam-sides down, in 13x9-inch baking dish. Drizzle with dressing.
BAKE 40 min. or until chicken is done (165°F). Sprinkle with remaining cheese; bake 5 min. or until melted.

Variation
For a south-of-the-border-style chicken dish, use diced tomatoes with bell or jalapeno peppers, KRAFT Mexican Style Shredded Cheese instead of the mozzarella cheese and chopped cilantro instead of the basil.

it's an act

a disappearing act that is :-)... I know i haven't written in so long.. but here's what I have been up to..
Registered at Babies R US
got some miles in outside.. then it went up to 95 degrees
picked out nursery paint colors
cooked lots of Easter food
Spent a great week off work with my husband
wishing i didn't have to go back to work tomorrow
Super excited can't wait for our baby girl to get here!!!!!!
as for running.... I'm still keeping it up, just alot slower, and I have to stop and find a bathroom about halfway through.
