Creamy Curried Veggies

Creamy Curried Veggies
Ingredients
1 large onion, sliced
2-6 cloves garlic, minced
1-3 large carrots,
2 tbsp olive oil
1 medium potato, cubed
1 1/2 cups cauliflower florets, sliced
6-8 mushrooms, sliced
1 tbsp curry powder
1/2 tsp cumin
1/2 tsp turmeric
pinch of cayenne pepper
1 cup coconut milk or soy milk
1 cup peas
3 tbsp Braggs or soy sauce
1. In a large saucepan, sauté the onions, garlic, and carrots in oil on medium-high heat until the onions become translucent. Add the vegetables, curry, cumin, turmeric, and cayenne, stirring often so they don't stick to the pan, cooking for 2-4 minutes. Add the milk, cover, and reduce the heat to medium-low. Simmer for 10-20 minutes, stirring occasionally, until potatoes can be pierced easily with a fork. Stir in the peas and Braggs (or soy sauce), and cook uncovered on medium-high heat stirring constantly until the liquid has thickened.
2. Serve over rice or noodlesNote: you can use whatever vegetables you have kicking around (e.g., spinach, kale, green onions).Makes 4 servings.

He is a keeper!

Yesterday...
Was a very rough day at work.
Nothing went well,
patients were in a bad mood,
and I got held over more then and hour.
I had txt the MR and told him
about the day.
When I got home from work, there was a lovely card
"Sorry for the bad day",
and
ONE
OF THESE!

A Grande iced de-caf Americano w/room for cream waiting for me, the night suddenly got better. He is such a great man.. I might just keep him around!

BH + Heat Wave = NO GOOD

Thats right, this heat wave has taught me a lesson.. I need to chill out a little more, or I end up flat on my back with my feet up downing water bottles in hopes that my contractions go away.

thankfully they did but it was a scarey time, they were unlike the normal BH I had had before, these were very low and VERY uncomfortable.

29 week OB Appt


I went to my 29 week OB appt today and everything checked out good, Heartbeat was normal 140's, I'm still measuring small but she said thats o.k. Here are a few things I have noticed so far.


My hands get so HOT I have to run them

under COLD water


I get up about 4-5 times every night

to pee


Baby girl gets hiccups about 3 times per day


She also thinks 1am is gymnastics hour


No real cravings


I get out of breath very easily


I have been having BH contractions every so often


This heatwave is killin me.

Dinner tonight


Beef Stroganoff


Ingredients:
1 lb. beef tenderloin tips
1 1/2 cups whole wheat bow tie pasta
1/2 lb. mushrooms, sliced
1/3 cup chopped onion
2 teaspoons olive oil
2 tablespoons whole wheat flour
1 10.5 oz. can beef broth
1. Cook pasta according to package directions.
2. While pasta is cooking, trim fat from meat and cut into 1 x 1/2" pieces. Spray a large skillet with vegetable cooking spray. Heat skillet over medium-high heat until hot. Add beef and stir-fry 3-5 minutes until outside surface is no longer pink. Remove from skillet.
3. In the same skillet, add the olive oil and heat until hot. Add the onions and mushrooms and cook until tender, about 2-3 minutes.
4. Stir in the flour. Gradually add 1 cup beef broth, stirring until blended. Bring to boil. Cook and stir 2 minutes. Return beef to skillet and heat through. If stroganoff appears too thick, add more beef broth to thin as desired. Salt and pepper to taste. Serve beef mixture over pasta. Add dollop of sour cream, if desired.
Makes 4 servings (approx 4 oz beef and 3/8 cups pasta)
Banana Raisin Muffins
Serves: 6Serving Size: 1
INGREDIENTS
1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups whole wheat flour
1/4 cup olive oil
1/4 cup 1% milk
2 medium bananas, mashed (around 1 cup)
1 teaspoon vanilla
1/3 cup raisins
DIRECTIONS
1. Preheat oven to 375º F.
2. Measure sugar, baking soda, salt and flour into a bowl. Stir well to combine ingredients.
3. Add oil, milk, mashed bananas and vanilla; mix just until flour is moistened.
4. Fold in raisins.
5. Use a non-stick muffin pan, or muffin papers. Fill muffin cups 2/3 full with batter.
6. Bake 15-20 minutes or until golden brown. Remove from pan right away.

Orange Delight

Ingredients
1 - .3oz box of Orange Flavor Sugar Free Jello
1 - 1oz box of Fat Free Sugar Free Vanilla Instant Pudding
1 - container of Cool Whip Free (8oz.)
Directions
Makes approximately 4 1-cup servings
Prepare Jello according to package directions by adding the hot and cold water. Stir in instant pudding powder mix (do not prepare as normal). Fold in entire container of Cool Whip Free, and wisk until completely blended. Refrigerate for a few hours until set.
**you can also pour into ice cube trays and freeze, or into those popsicle molds that you freeze for a refreshing treat**

Chicken & Corn Chowder

INGREDIENTS
2 tablespoons butter
1/4 cup onion,chopped
1/4 cup celery, chopped
1 jalapeno pepper, seeded and minced
2 tablespoons whole grain flour
3 cups 1% milk
2 cups skinless and boneless chicken, chopped
1-1/2 cups fresh or frozen corn kernels
1 teaspoon fresh (or 1/4 teaspoon dried) thyme
1/4 teaspoon ground red pepper
1/8 teaspoon salt
1 (14.75 oz.) can of creamed corn
DIRECTIONS
1. Melt butter in a large Dutch oven over medium heat.
2. Add onion, celery, and jalapeno and cook about 3 minutes or until tender.
3. Add flour and cook for 1 minute, stirring constantly.
4. Stir in milk, chicken, corn, thyme, red pepper, salt and creamed corn.
5. Bring to a boil then reduce heat to medium and cook for about 5 minutes, stirring frequently.
