It's cheat day ya'll {Breakfast Casserole Recipe}

Saturday is cheat day around here, every other day I am strict with my diet, and working out.. however when Saturday come, I first weigh in and then go all freshman living in a college dorm with my eating... O.k., o.k. maybe not that bad, But.... I do usually end up feeling awful by the end of the day.

Last night I knew that I wanted a yummy breakfast since every other day I drink a protein shake for breakfast. We all know that breakfast foods are the very best foods of all, so breakfast casserole it was! 

Ran to the store grabbed, eggs, sausage, bacon, and a dump truck load of cheese. 

This morning I got up (actually I slept in, every other morning I get up at 4:45 and go to the gym or go running) but today I got up around 6:30, let Emmaline lay in bed with us for a bit, then got up and started prepping the casserole. Now should I decide to make this again, then I will certainly prep it all the night before and just pop it in the oven the morning of. 

So here is what you gotta get:
7 eggs
1 Cup of cheese (lets be honest here I used 2.5C)
1 C cooked chopped up sausage
1/2 C cooked crumbled bacon
1/2 C milk
1/2 C lite bisquick
2 cups of uncooked thawed hash browns

To Make it:
( I would prep the night before serving)
Brown and crumble both meats set aside

in a pan with a small amount of oil, brown the hash browns. 

In another bowl, mix together all eggs, cheese, milk, and bisquick.

In your casserole dish place the hash browns to fill the bottom, then place the meats on top of that. Next our the liquid mixture over the top. 


Pop the dish in the oven at 375* for 30 minutes.

Cheese me up on cheat days! Love me some cheese and sweets. I've been dabbling a bit with the paleo diet, not all out yet since I'm breast feeding. I lost 4 pounds last week and that's probably a bit too much, I don't want any toxins in my milk and Gunner was a bit fussy last week. So I'm going to keep at it but eating a TON more fruit and ill be adding white potatoes. I need more carbs.

That looks so yummy! It doesn't sound too hard to make either!
