Recipe- Summer crustless egg bake!

I have always wondered the terms and the differences in egg bakes, come are casseroles, come are bakes, while others get classified as quiche, and fritatas... which ever one this one would fall into, you could call it that.. or you could call it delicious, quick, and healthy!

It took me maybe 15 minutes to prepare, 30 mins in the oven, and was a nice light.. but filling dinner, along with fruit salad!

YOU WILL NEED:
1C Shredded zucchini
1/2 C Shredded asparagus
1/4 C Chopped spring onions.
1/2 C Skim Mozzarella cheese
2Tbsp reduced fat parm cheese
1/2 C whole wheat flour
1tsp baking powder
2/3C 2% milk
1 tsp Olive Oil
2 eggs beaten
bit of salt, and cracked peppercorn
cooking spray

TO MAKE:

Preheat over to 400 degrees, grease a pie dish, set aside





In a Large bowl combine veggies, and cheeses.


In another bowl mix the rest of the ingredients, then pour into veggies, mix all together, and pour into pie dish!

Bake for 30 mins and ENJOY
